This is a recipe for fillet steak.

A fillet steak is a portion of the ribeye muscle. The “filet” part refers to its shape: it’s like a filet mignon but smaller.

The Wagyu meat I will be using for this recipe comes from Japan, meaning it’s an incredibly high-quality source of wagyu beef. It’s also known as Japanese Kobe beef or “wagyu” (ワギー). In general terms, wagyu is a breed of cattle bred specifically for their tenderness and flavor while maintaining their muscular structure and hardiness.

This is the way you cook it.

The first step is to cook the steak. You can grill or broil it, but you should aim for a temperature of medium-rare (about 145 degrees) and doneness that’s one notch below that. When ready to serve it, let the meat rest for five minutes before carving it into thin slices with a sharp knife.
